Lemon Rice

Lemon rice is a simple South Indian recipe that is light on the stomach, appetizing and healthy. This is an easy to make dish even from leftover rice and the nutritive values of asafoetida, turmeric are immense.

Ingredients

Basmati Rice 380gms
Oil 4 tbsp.
Onion 1 large, finely sliced lengthwise
Mustard Seeds 1tsp.
Peanuts 2 tbsp.
Curry Leaves 10-12
Asafoetida ¼ tsp.
Turmeric Powder ½ tbsp.
Red Chillies 2whole
Lemon juice 1
Salt To taste

Cooking Instructions

Boil the basmati rice and allow it to cool. This is important for the grains to stay separate. Leftover plain boiled rice works best.

Heat oil in a pan. Add mustard seeds. When they crackle, add red chilies and peanuts.

Once the peanuts are lightly roasted add asafoetida, turmeric powder and curry leaves. Sauté for 10-15 seconds and add sliced onion. Sauté for a couple of minutes until the onions turn soft.

Now add rice to this tempering, sprinkle salt on top and stir well until thoroughly mixed.

Mix slowly as we want to avoid breaking the grains.

Squeeze lemon juice and mix one last time. Cover and cook on low flame for 4-5 minutes for all flavours to blend with the rice.

Serve hot with yogurt, pickle, papad or coconut chutney.
